Reflecting the diverse melting pot that makes up contemporary Australia, the recipes range from Korean kimchi, to Russian snacks (zakuska) and Indian gulab jamun, sticky, syrup-soaked doughnut-like sweets, that are served here with saffron yoghurt ice-cream.
There are many modern Australian dishes too, including chilli-glazed lamb ham, gelato opera cake and mussels with cultured butter.
